Bison Meat Loaf

Ruthie’s Bison Meat Loaf


500g Scottish Bison Mince

2 rindless rashers (chopped)      

50 g breadcrumbs

100 g mushrooms (chopped)

1 small onion (finely chopped)

1 small egg

1 tsp salt

Ground black pepper

1 red chilli (very finely chopped) – optional

6 tbsp tomato ketchup

1 tsp Worcestershire sauce 


Preheat oven to 180oC

Grease a loaf tin about 20 x 10 cm

Prepare all ingredients and mix together.

Press firmly into the loaf tin.

Bake for an hour.

Remove from the oven, leave to stand for 5 minutes, turn out, transfer the right way up to a serving dish and serve in thick slices.

Top tip: Sometimes Ruthie smears the top of the meat loaf with Dijon mustard while it’s still warm, allowing it to seep into the meat loaf for an extra bit of zing.
