Seared Bison Nicoise

Tender bison steaks are seared on a griddle & mixed with the components of a warm Mediterranean salad.
 

FOR THE DRESSING

6 tablespoons extra virgin olive oil

2 tablespoons lemon juice

2 crushed garlic cloves

1 teaspoon dijon mustard

2 tablespoons capers

4 tablespoons of fresh mixed herbs (tarragon,chives basil parsley etc)

12 oz small salad potatoes,boiled and sliced

6oz green beans trimmed and blanched

3 large boiled eggs sliced

2 large ripe tomatoes sliced

1 small can of anchovy fillets

2 oz black olives

Mix into salad bowl

 

MARINADE FOR BISON STEAK

2 tablespoons lemon juice5

5 tablespoons olive oil

2 coves of crushed garlic

Coarse black pepper

Salt

 

TOSS BISON STEAKS IN MARINADE AND LET INFUSE FOR 1 HOUR

Prepare the salad nicoise

Drain the bison steaks and pan fry for 2 or 3 minutes on each side

Remove and rest for 10 minutes, then slice thinly.

Pile into the centre of the salad

Any remaining dressing is good heated up and drizzled over top of salad
