Stir fried thin medallions of bison on a bed of vermicelli rice noodles

 
500 g bison steak meat

25g olive oil

1 medium onion chopped thinly

3 garlic cloves,crushed

1 red or green chilli finely sliced

1 tablespoon of fresh grated ginger

30ml of dark soy sauce

A  hand full of fresh chopped coriander

 Marinate the meat into the above ingredients and let sit for a couple of hours

Heat up 2 table spoons of oil in a heavy based frying pan or saute pan

Stir fry the meat (200 grams at a time) for about 40 seconds on a high heat; transfer the finished meat into a heated dish.

Prepare the vermicelli noodles (you can buy these prepared in packets) and just stir fry for a couple of minutes.

Any remaining marinade can be stir fried into the noodles.

Dish the cooked bison medallions onto the noodles

Sprinkle with parsley or coriander.

This can serve 4 as a main or 6 as a starter
